Jeff and I made this salsa yesterday morning to take with us out on the boat. Very healthy, light and refreshing -- perfect snack for a hot day.
Mango Salsa
Prep Time: 30 minutes
Servings: 8
Ingredients:
1 Peeled and finely diced mango
3/4 C. Finley diced strawberries
1/3 C. Finley diced red onion
1/2 C. Finley diced cuccumber
6 Basil leaves, minced
1 Clove garlic, minced
1 T. Lemon Juice
1/2 C. Blueberries
1/2 tsp. Salt
1/4 tsp. Black Pepper
Optional: 1 T. minced jalapeno pepper
Mix ingredients together in the order listed. Allow the salsa to sit in the fridge at least one hour before serving. Serves best with blue corn chips. Jeff likes the spice the jalapeno adds but I do not like my mouth on fire while eating fruit.
