Great American Apple Pie


 
Not much is more American than a summer time apple pie, and this one is the best.

Apple Pie


Prep Time: 40 minutes
Servings: 8
Ingredients:

Crust: 


2 C. Sifted flour
2/3 C. Shortening
1 tsp. Baking Powder
1 tsp. Salt
2 T. apple cider vinegar
Water

Using a fork or pastry cutter, mix flour and shortening in a medium sized bowl cutting them in together. Add salt and baking powder.  Then add vinegar and mix.  Add water a couple table spoons at a time, cutting it in until it starts to form a ball.

Divide dough into two evenly sized balls.  Flour your rolling surface and roll dough into a round crust approximately 1 inch larger than the diameter of your pie pan. Carefully fold dough in half and place in pie pan.

Roll out your second ball of dough the same way. Fold in half and use the prongs of a fork punch holes in a few places to serve as air vents.

Filling:

6 Golden delicious apples diced
1 C. Sugar
1/3 C. Flour
2 T. Cinnamon
2 T. Margarine
3 T. Maple syrup
1/4 C. Soy milk

Wash, core, and dice apples and place them in a large bowl. Melt margarine in the microwave and mix in 1/2 C. Sugar, maple syrup, cinnamon and flour, soy milk in that order. Pour over apples and mix just until apples are covered.

Put apples into bottom pie crust, the key to this pie is that there is a heaping lot of apples.  You may need to use your hands to pack them into a mound in your pie pan. Top with remaining sugar and dash of cinnamon. Then add the remaining crust and crimp the edges together around the rim.

Bake in the over for 1 hour.  Remove and let cool before serving. The meat eater loves a big scoop of ice cream on top of a warm slice of pie, but the vegan can also enjoy a delicious scoop of soy ice cream.
